These healthy, No-Bake Carrot Cake Energy Bites are the perfect gluten-free snack for Spring. They’re an easy snack to whip up for a boost of energy!

Ingredients

  • 20 dates soaked in warm water for 20 minutes
  • 1 cup carrot peeled and finely grated
  • 1/4 cup coconut flour
  • 2 tbs shredded coconut
  • 2 tbs coconut milk powder
  • 2 tbs almond milk
  • 1.5 tbs water 1.5-2 as needed
  • 1 tsp cinnamon optional

Instructions

  • Soak the dates in warm water
  • In a food processor, add the dates, coconut milk powder and almond butter (and cinnamon if using). Process until mostly smooth (leave a few chunks for texture).

  • Scoop mixture into a bowl and stir in the coconut flour. Let sit for five minutes.

  • Mix in the carrot and shredded coconut.
  • Add in the water as needed. Roll your hands in coconut oil and portion into balls on parchment paper.

  • Freeze 10-30 minutes.
