No-Bake Carrot Cake Energy Bites
These healthy, No-Bake Carrot Cake Energy Bites are the perfect gluten-free snack for Spring. They’re an easy snack to whip up for a boost of energy!
Servings: 10 balls
- 20 dates soaked in warm water for 20 minutes
- 1 cup carrot peeled and finely grated
- 1/4 cup coconut flour
- 2 tbs shredded coconut
- 2 tbs coconut milk powder
- 2 tbs almond milk
- 1.5 tbs water 1.5-2 as needed
- 1 tsp cinnamon optional
Soak the dates in warm water
In a food processor, add the dates, coconut milk powder and almond butter (and cinnamon if using). Process until mostly smooth (leave a few chunks for texture).
Scoop mixture into a bowl and stir in the coconut flour. Let sit for five minutes.
Mix in the carrot and shredded coconut.
Add in the water as needed. Roll your hands in coconut oil and portion into balls on parchment paper.
Freeze 10-30 minutes.
