Trail Mix Breakfast Cookies

- 1 cup almond meal
- 1/3 cup almond butter
- 1 egg
- 1 tsp baking powder
- 1/3 cup coconut unsweetened, shredded
- 1/8 cup flaxmeal
- 1 tbs chia seeds
- 1/4 cup hemp hearts
- 1/8 cup raisins
- 3 dried figs chopped (about 1/4 cup)
- 3 tbs avocado oil
- 1/4 cup almond milk
- 2 tbs honey
- 1/4 cup walnuts chopped
Preheat the oven to 350 degrees.
In a large bowl mix together the dry ingredients except for the raisins, figs, and walnuts.
In a small bowl, whisk all the wet ingredients except the almond milk.
Pour wet into dry and mix well.
Stir in the dried fruit and walnuts. Then the almond milk.
Grease a cookie sheet and use an ice cream scoop to portion out 12 cookies. Press slightly to flatten.
Bake for 14 minutes. Remove from the oven and let cool for ten minutes.
