Dairy-Free Red Velvet Chocolate Chip Cookie Dough Bites
These dairy-free red velvet chocolate chip cookie dough bites need no baking and are healthy, too. No gluten, grains, eggs or unnatural food dyes. Their pretty red color comes from red beet powder!

- 3/4 cup blanched almond flour
- 1 Tbsp coconut flour
- 2 Tbsp coconut sugar
- 1 Tbsp red beet powder
- Pinch of sea salt
- 3 Tbsp coconut oil, melted
- 2 Tbsp full-fat coconut milk
- 2 tsp pure vanilla extract
- 1/4 cup good-quality dark chocolate chips, plus an extra 2 Tbsp for drizzling, if desired
In a large bowl, mix together the almond flour, coconut flour, coconut sugar, red beet powder and sea salt. Then, add the coconut oil, coconut milk and vanilla, and stir to incorporate. Lastly, mix in the dark chocolate chips.
Roll into tablespoon-size balls and place on a plate lined with parchment paper. Chill in fridge for 20-30 minutes to firm up before eating, unless you prefer softer cookie dough bites. Then, if desired, melt remaining 2 Tbsp dark chocolate chips in the microwave on low setting. Drizzle over cookie dough bites and enjoy.
Store any leftovers in the refrigerator and eat within a few days.
