I’m a total sucker for pumpkin spice everything! Even though some people are getting sick of the pumpkin-spice-everything trend, I say bring it on. I can never get enough pumpkin!
One thing I love about the fall and winter aside from the crisp air, sitting by the fire and being with family is all the yummy food. Ever since I was a kid, I’ve always loved cooking and baking…especially around the holidays. That’s one of the reasons that I started my blog Healy Eats Real–to share some of my favorite original paleo and gluten-free recipes so that other paleo folks or people with food sensitivities didn’t have to feel left out.
So, considering my love for holiday cooking it’s no surprise that my newest recipe is this pumpkin spice granola. I’m no stranger to the pumpkin trend. In fact, I’ve created recipes for Paleo Pumpkin Cheesecake, Paleo Pumpkin Pie Smoothie, Paleo Pumpkin Spice Pancakes, and other yummy pumpkin recipes.
This pumpkin spice granola makes for a delicious healthy snack or a protein packed cereal substitute. I usually have this granola with homemade almond milk or coconut yogurt for breakfast.
This recipe also makes a great food to give out as gifts. All you have to do is put it in a jar, put a ribbon around it and give it to friends. I actually just made this recipe to give to my parents as a gift and to give to my friend who just had a baby and they LOVED it!
Paleo Pumpkin Spice Granola
Makes about 2-3 cups of granola
1 cup pecans or walnuts
3/4 cup slivered almonds
1/4 cup pumpkin seeds (find them here)
3 tbsp chia seeds (find them here)
1/4 tsp sea salt
2 tbsp honey
2 tsp pumpkin pie spice (find it here)
1 tbsp coconut oil (find it in bulk here)
1 tbsp ground golden flax* (find it here)
1/4 cup thick cut coconut flakes (find them here)
1/4 cup raisins (find them here)
*to grind flax seeds put them in a coffee grinder
Directions:
- Preheat the oven to 300°. Combine all ingredients except for the raisins and the coconut flakes in a bowl and mix well to incorporate the honey and chia seeds with the other ingredients. Make sure you melt the coconut oil before you mix it with the other ingredients.
- Spread the mixture on a baking sheet lined with parchment paper. Bake at 300°, mixing halfway through, for about 8-10 minutes until the nuts are somewhat crispy and golden brown. Then, add in the coconut flakes to the granola and mix it in and bake for another 2-4 minutes until the coconut flakes are golden brown. The coconut flakes can burn fast so it’s better if they’re added later.
- Remove granola from the oven and let cool, then add in the raisins. The raisins tend to get too hard if you bake them in the oven, so I it’s better to put them in afterwards.
