Paleo Strawberry Jello –

I can’t take credit for this brilliant idea of making strawberry jello that looks like watermelon. How cute is that? I was walking through a bookstore and I spotted the image on the cover of this book. So, I came home and decided to make a real food, healthy version of these little jello strawberry watermelons or whatever you would call them.

I have to be honest with you all… the strawberry jello filling on its own is out of this world, uhh-mazing! But, once you put it in lime rinds and add black sesame seeds, it gets a little bitter and isn’t super tasty. Black sesame seeds and strawberry jello, just isn’t a thing. They are more of a Monet… lol … Did I just completely date myself with a Clueless reference?

Paleo Strawberry Jello

This recipe can easily be doubled.

Ingredients
1 lb. strawberries, quartered (rinsed and leaves removed)
2 tablespoons filtered water + 1/4 cup of filtered water
1-2 tablespoons raw honey (depending on how sweet you like it, I usually just do 1 tablespoon)
1 tablespoon gelatin (I use this brand because it is grass-fed)

3 limes, halves, pulps scooped out and discarded
1 teaspoon black sesame seeds

  1. First make your strawberry sauce. In a small saucepan, place strawberries, honey and 2 tablespoons of water. Bring to a simmer and cook for about 10 minutes, until strawberries are very soft.
  2. Pour the strawberry sauce in a blender and mix until smooth. Place it through a strainer to remove the seeds.
  3. Place the smooth strawberry sauce back into the saucepan. Add the additional 1/4 cup of filtered water and the 1 tablespoon of gelatin. Over medium to low heat, whisk strawberry and gelatin mixture vigorously until all of the gelatin is well dissolved. Watch carefully to make sure the mixture doesn’t come to a boil.
  4. If you are just making the jello, you can pour the mixture into a jar of any sort and place it in the fridge to firm and set – about 2 to 3 hours.
  5. If you are making the little watermelons, then set the mixture aside and allow it to cool slightly.
  6. Carefully spoon the strawberry jello into the lime rind halves. Set them in the refrigerator until firm – about 2 to 3 hours. I put them in small  bowls with a paper towel around it to keep it from tipping.
  7. Once they are firm. Halve the limes and sprinkle them with sesame seeds.

    Why not use chia seeds? I think it would still look good!

    These are so cute! I am allergic to strawberries but I am going to try these with some other berry. Thanks for sharing!
