Joining a CSA (community supported agriculture), is a great way to ensure that you are incorporating healthy, organic, vegetables into your diet. Our local CSA costs $22 a week, but we actually split that with my brother-in-law. We eat veggies with every meal, and we barely get through our half share every week – so, pretty much, it is a killer deal!
Plus, it is so fun to get suprrised & get to play Iron Chef in your kitch! I made this salad over the weekend & topped it with chicken. It was delicious & a perfect light meal for a sunny day like this! Plus, arugula is an excellent source of folate, vitamin C, & calcium. Fennel is a great antioxidant.
Ingredients:
1/2 cup extra-virgin olive oil
1/4 cup fresh lemon juice
1 shallot, minced
1/2 teaspoon (packed) grated lemon peel
1 large fresh fennel bulb, trimmed, halved, very thinly sliced
6 cups trimmed arugula leaves
2 mandarin or regular oranges (whatever you have on hand)
Whisk first 4 ingredients in small bowl. Season dressing with salt and pepper. Combine fennel and orange in a medium bowl; mix in 3 tablespoons dressing.
Place arugula in large bowl. Add fennel-orange mixture. Toss, adding more dressing to taste.
