delicata squash & chroizo hash

Gluten-Free Dairy-Free

Is your fridge overflowing with delicata squash? Mine certainly has been! This was a great change from my usual eggs, avo & Farmhouse jalapeno kraut breakfast.

Serves 2
Ingredients

2 cups delicata squash, chopped
1 cup mushrooms, sliced
2 cloves garlic, crushed
1/2 pound chorizo, casing removed
4 eggs, fried
salt & pepper
fresh parsley for garnish

  1. Preheat oven to 375F
  2. Toss squash, mushrooms, garlic and chorizo together.
  3. Spread onto a baking dish and bake until, veggies are tender and chorizo is browned.
  4. Top with fried eggs, garnish with parsley & salt & pepper to taste.
