Are you wondering why this post is starting with a picture of Indy looking exhausted in a car seat? This car seat was the only thing that was not awesome about our vacation. I don’t know if it was just that rental car agency or Kauai, but this was the worst car seat I have ever seen. First of all, it was SO dirty. Thankfully, we had a washer & dryer in our condo, so we cleaned it up a bit. I honestly think it had never been washed. Also, it had no padding on the straps, so it was really uncomfortable. Good thing, dad MacGyver-ed a solution, using my socks! We didn’t bring our car seat, in an effort to travel light, but big mistake. I think drives around the island would have been much more pleasant, if we had. Oh well! Next time!
My life would not happen without lists! I make lists for EVERYTHING. I mean my lists, have lists. Seriously! I recently discovered an app called, Evernote and I am in love with it. It is a list makers dream.
Our packing plan was to pack minimally, but make sure Indy had everything needed to eat well while we traveled. Indy was 9 months old when we went to Kauai. She was eating a fair amount of solids, mostly egg yolks, liver, pureed grass-fed beef, bone-broth, fermented cod-liver oil and some veggies and fruit with ghee. My husband said no way was I packing liver for the trip. I honestly wasn’t going to, but I thought it was funny that he even felt like he needed to tell me that. I decided that I would bring some grass-fed ghee and fermented cod liver oil for Indy. Her diet wouldn’t be as nourishing as it is at home, but it was good enough for a week of vacation. Grass-fed beef was easy to find in Kauai, but I didn’t want to pack a mini food processor. But, I’d be lying if I didn’t say that I thought about it :)! Indy mostly ate egg yolks, avocado, papaya and sweet potato. She also went out to her first fancy meal and had fish roe!
I hope this printable list makes packing a little easier for you, the next time you take a tropical vacation with the littles!
This is it for now for my Kauai series! I am working on a poke recipe that I hope to share with you in the next couple of weeks!

Kristen! You have to download this app then. It’s free and you can access the same notes from your phone and your computer. It has brought so much sanity to my life! 🙂
