I’ve been really into spiralizing beets lately. I am usually trying to toss together dinner at the last minute. I love how quickly beet noodles cook. Plus, they make it look like I slaved away in the kitchen. đŸ˜‰ You will need some sort of spiralizing device to make this recipe. I use and LOVE this one. This Paleo Beet Salad is also delicious topped with chopped walnuts and goat cheese. If you don’t tolerate these foods, it is still tasty as is.

Do you happen to have any tips on minimizing the mess from spiralizing beets? I love that it is beet season right now… but the staining!
Hi Anne! I don’t find it to messy with the spiralizer, I just put a plate under it to catch the beets and wash the spiralizer right after I am done. It does stain my hands like crazy! I found that washing them with a couple of drops of lemon essential oil helped get the stains off. Hope that helps!
Mmm, that looks delicious! I’m usually not a huge beets fan, but that salad just might convert me. Like you, I’m usually putting dinner together at the last minute…and the last thing I want to do is prep and cook all night! Take a look at my most recent post for Paleo + Gluten-Free Chicken “Tacos” that are so easy and delicious! đŸ™‚
