Paleo Coconut-Lime Fruit Salad

I decided to share my Coconut-Lime Fruit Salad from my latest book, The Paleo Foodie because it has been a favorite around here lately. With summer in full swing and a two year old in the house, we go through melons like it’s nobody’s business. We’ve tried so many new varieties this year that I actually have never even heard of before and I can’t even remember all the names. They’ve all been delicious!

To slow down the amount of fruit Indyanna consumes, I like to add some fat to it. This helps her get full quicker and stay full longer. Plus, adding the coconut lime dressing is a fun twist on a traditional fruit salad. This is a great Paleo dish to share at a picnic or potluck. The flavors are bright, fresh and fun. And the dish is easy to whip up! Perfect for all you busy moms!

Paleo Coconut-Lime Fruit Salad

{from The Paleo Foodie Cookbook}

Serves 4

Ingredients
2 cups strawberries, halved
2 cups honeydew melon, chopped into 1-inch cubes
1 mango, chopped
1⁄4 cup coconut milk (homemade or I like this brand)
4 teaspoons fresh lime juice
2 teaspoons fresh basil, chopped
1⁄2 teaspoon raw honey (find organic, raw honey here)
dash of sea salt

  1. Combine strawberries, honeydew and mango in a medium-sized bowl.
  2. In small bowl, whisk together coconut milk, lime juice, basil, honey and sea salt.
  3. Pour over fruit and serve.

    That Looks so refreshing! Coconut and lime go so well together…Bet it would be good tossed with a little Lime infused Avocado Oil as well. (love it on my fruit!)
