I am thrilled to participate in the #SoLetsPigOut virtual potluck, hosted by my friends Gina of So… Let’s Hang Out and Emily of The Pig and Quill. Both of their blogs are must reads. These gals are pee-your-pants funny and geniuses in the kitchen.

I decided to share my Coconut-Lime Fruit Salad from my latest book, The Paleo Foodie because it has been a favorite around here lately. With summer in full swing and a two year old in the house, we go through melons like it’s nobody’s business. We’ve tried so many new varieties this year that I actually have never even heard of before and I can’t even remember all the names. They’ve all been delicious!
To slow down the amount of fruit Indyanna consumes, I like to add some fat to it. This helps her get full quicker and stay full longer. Plus, adding the coconut lime dressing is a fun twist on a traditional fruit salad. This is a great Paleo dish to share at a picnic or potluck. The flavors are bright, fresh and fun. And the dish is easy to whip up! Perfect for all you busy moms!

Arsy! I’m so happy you joined us for this. I just adore you and this blog of yours. This recipe looks SO gosh darn refreshing! Loving the addition of the coconut! I feel like this is something that I would want to eat the entire bowl of… I have a sordid history with fruit. 😉

That Looks so refreshing! Coconut and lime go so well together…Bet it would be good tossed with a little Lime infused Avocado Oil as well. (love it on my fruit!)

Ok, this needs to be in my face as soon as possible — especially considering some pretty irresponsible bingeing I did this weekend. (I ate HOW many slices of Woodstock’s cinnabread? Oh, right…) Love the pretty colors, too. 🙂 Thanks so much for hanging out with us, Arsy! Hope to do the ‘real life’ get together soon! xo – Em

Seriously though, how have I never used coconut milk in a fruit salad? So simple and so perfect. I need to do this before the summer’s up!
