30 Day Reset – Week 3 Meal Plan
Here’s my meal plan for Week 3 of my 30 Day Reset. For more ideas, check out my week 1 meal plan and week 2 meal plan. Even if you aren’t doing a 30 Day Reset, these meal plans can help you plan out easy and healthy meals for the week!
Week 3 Meal Plan
If you want to see what I am eating during this 30 Day Reset, I encourage you to follow me on Instagram, as I tend to post a lot of our daily eats there!
Breakfast – I eat the same few things for breakfast usually.
- Eggs scrambled, fried, poached or soft-boiled
- Nutrient-rich berry smoothie
- Yam, celery root and bacon hash
Snacks – I don’t snack much, but when I do, these nori wraps with fresh or smoked salmon are my go-to!
Sunday – Prep day!
- I didn’t prep much this past Sunday. I used all the leftover veggies in the refrigerator to make a simple chicken stir-fry. I cooked chicken, broccoli, zucchini, peppers, onions and garlic in sesame oil and seasoned with coconut aminos.
Monday
- Breakfast – Nutrient-rich berry smoothie (with no sweetener)
- Lunch – I had a Paleo Pad Thai at a vegan restaurant. It was good, but overpriced and left me starving.
- Snack – Olives, chicken sandwich meat (we use this brand and the ingredients are really clean)
- Dinner – Left over chicken and veggie stir-fry with a cup of bone broth. I also made a double batch of Primal Palate’s Beef, Liver and Onion Meatballs and roasted yams for the following day.
Tuesday
- Breakfast/Lunch – I ate a late breakfast/early lunch of Primal Palate’s Beef, Liver and Onion Meatballs, plus half of a roasted yam with ghee. I used a method that I had seen on Ben Hulet’s Instagram to make the meatballs. He cooks his meatballs in the oven, packed close together. It worked beautifully! The meatballs were crispy on the outside and juicy and tender on the inside.
- Dinner – I ate more meatballs for dinner, along with roasted carrots and half of a yam. I also made BBQ Ribs from my new eBook (for 30 Day Reset, make homemade BBQ sauce without sweetener) and coleslaw for Brooke and Indyanna. They don’t like repeat meals quite as much as I do! 🙂
Wednesday
- Breakfast – scrambled eggs, avocado, Farmhouse jalapeno kraut
- Lunch – I finished up the leftover meatballs. I also had a large salad with roasted beets and avocado.
- Dinner – I am checking out a brand new farm to table restaurant with Natalie of Honey, Ghee & Me. But, I’ll still be cooking before I head out. Every other Tuesday, we get fresh fish from Local Catch Monterey Bay. This week we got some Rosefish. I am thinking of breading it with tapioca and plantain chips and making fried fish for fish tacos. It’s Brooke’s birthday week, so I’m trying to make him some special meals. If it turns out well, I’ll share the recipe!
Thursday
- Breakfast – scrambled eggs, avocado, Farmhouse jalapeno kraut
- Lunch – First thing in the morning, I plan to put an entire chicken in the slow cooker and make my delicious and juicy, Slow Cooker Lemon Herb Rotisserie Chicken. You can find the recipe in my new eBook! For lunch, I’ll have chicken lettuce wraps with my homemade mayo. I plan to put the chicken carcass and bones back in the slow cooker to make some broth.
- Dinner – Slow cooker chicken with cauliflower and leek mash, plus a side of sauteed zucchini.
Friday
- Breakfast – scrambled eggs, avocado, Farmhouse jalapeno kraut
- Lunch – More chicken lettuce wraps with my homemade mayo and leftover cauliflower mash and sauteed zucchini.
- Dinner – I am on my own for dinner, so I’ll just eat more leftover chicken with a large salad. I heart leftovers, in case you haven’t noticed! 🙂
Saturday
- Brunch– We like to be lazy and sip our tea/coffee on Saturday mornings, while we all hang out as a family. We have a later brunch of eggs, bacon and fruit salad.
- Snack – My go-to nori wraps.
- Dinner – Homemade chicken and vegetable soup with the broth from Thursday.
Sunday
- Breakfast/Brunch – It’s Brooke birthday, so we are going out for a family brunch. I am sure I will have eggs of some sort and fruit!
- Dinner – BBQ burgers and sweet potato fries to celebrate Brooke’s birthday!
