Healthy Go-To Lunch Idea: Smoked Salmon & Cucumber Nori Wraps

This is less of a recipe and more of a lunch idea for those days (like today for me!) when your day is so booked that you barely had time to scarf a paleo muffin for breakfast, let alone cook lunch! Or those days that dinner was so delicious that you ate it all, and didn’t leave any leftovers to pack for lunch the next day! This happens to me often too! 🙂

As much as we try to be organized and prepare ahead for our meals, we all run into those days that are crazy busy and we need to eat something quick. These are the days that I find that I need a nutritious meal most. The smoked salmon in these wraps is a great source of omega-3s (anti-inflammatory essential fatty acid) and the nori sheets are a great source of nutritional iodine. If I am in a really big hurry, I pair these wraps with a piece of fruit and voila, within minutes, I have a healthy, balanced meal that will keep me going for hours.

The core ingredients for these wraps (smoked salmon and nori sheets) don’t go bad easily, so I always have them on hand!

You can use a sushi roller (like this one) to roll your wrap tightly, but you don’t have to. A loosely wrapped roll tastes just as good! 🙂

I am going to share my favorite nori wrap combo with you, but the options are endless! I have provided some additional filling ideas below.

 

Smoked Salmon and Cucumber Nori Wraps

Ingredients
Nori Wraps (I use these ones)
Smoked Wild Salmon
Cucumber, julienned
Avocado
Fresh Basil
coconut aminos for dipping (I use this one)

Other quick filling ideas: tuna, shrimp, lobster, macadamia nuts, mango, pesto, fresh herbs, carrots, scallions, jicama, wasabi, bell pepper

    So, I have all these ingredients and have been eating these like a sandwich. I’d much rather roll them. I’m not sure what to do with the aminos. Dip what? Sorry, I’m a sushi roller newbie. Thanks!

      Yes! I roll it like sushi and then dip it in the aminos! So tasty!
