Made in the slow cooker, this chicken marengo infuses the savory tomato sauce with mushrooms and onion for a delicious dinner.
Chicken Marengo is such a simple (but feels fancy) dinner to enjoy for the whole family – and made in the slow cooker so it’s very hands off! This one-pot meal combines tomatoes, mushrooms, and onions to give the sauce a great flavor. White wine adds depth and a touch of acidity to this recipe, but chicken broth will also do the trick. Traditionally, chicken marengo is served over pasta or rice, however I usually cook up a batch of zucchini noodles for a Paleo and Whole-30 compliant meal. We also enjoy this hearty dish with olives on the side!
Chicken Marengo
Prep Time: 10 minutes
Servings: 6-8
INGREDIENTS
- 2-3 lbs. skinless chicken (you can use any parts that you prefer, bone-in or bone-out)
- 1 16 ounce jar marinara sauce
- 1 onion, sliced
- 1/2 cup dry white wine (or chicken broth)
- 1/4 lb. fresh mushrooms, sliced
- salt and pepper
INSTRUCTIONS
1) Place chicken at the bottom of the slow cooker. Generously season with salt and pepper.
2) Add the onions around the chicken.
3) Add the white wine and the marinara sauce.
4) Cover and cook on low for 4 hours. Add mushrooms, and then cook for one additional hour.
5) Adjust salt and pepper to taste.
