There is one thing I sometimes miss about my old non-paleo ways … Having a coffee and a pastry for breakfast. I know, I know, so unhealthy and not a balanced meal. Today being the last day of vacation before returning to work, I thought I would treat myself! So, I made paleo cookies and had a cup of coffee with full cream for breakfast … mmm …. so good! At least I thought so! But, this might be because it’s been a awhile since I have tasted a real gluten filled cookie! Hope you try these out because they are a great paleo treat and will make your house smell delicious!
Ingredients:
Dry
1 cup almond meal
1 cup ground pecans – I purchased bulk pecans and ground them in a food processor
1/4 cup semi-sweet chocolate chips – you can also use cacao nibs
1/4 cup dried berries
1/2 cup dried turkish apricots – chopped
1/2 cup shredded coconut
1 tsp. cinnamon
Wet
1/4 cup coconut oil
1 egg
4 Tablespoons honey
1/4 teaspoon vanilla
Preparation
Preheat your oven to 350.
Combine all dry ingredients in a bowl. In a separate bowl, combine all wet ingredients and mix well. Once, the wet ingredients are mixed really well, pour over the dry ingredients and mix.
Place a heaping spoonful at a time of the mixture on a cookie sheet. You can oil the cookie sheet to prevent from sticking. This mixture should make about 10-12 cookies. Bake for about 8 to 10 minutes. Keep your eye on these, they bake quick.
