We’ve been splurging on these Paleo wraps pretty often this summer. We get them at our local health food store or you can order them here. One of our favorite fillings is this mixture of shrimp and mango. It is so light and refreshing on a hot day. And it’ so quick to make. You can easily whip these up at the last minute, especially if you keep some frozen shrimp in your freezer!
We also like to eat this with curried chicken (recipe coming soon!) and stuffed with this Paleo mint chocolate chip coconut butter for dessert!
I love using mirco greens in these wraps to give them a spicy bite! But, you can change up the herbs however you like!
Paleo Shrimp & Mango Wraps
Serves 2
8 ounces of shrimp, deveined, peeled and chopped
2 cloves garlic, minced
1 tablespoon toasted sesame oil (find the organic one that I use HERE)
1 small mango, peeled and chopped
1 small jalapeno, chopped
juice of 1 lime
Micro greens
Mint
cucumbers, julienned
Paleo wraps (find them HERE)
- Heat sesame oil in a heavy bottomed pan over medium heat, add garlic and shrimp and cook for 2 to 3 minutes until shrimp is opaque and cooked through.
- Place shrimp mixture in a bowl, add mango, jalapeno, lime juice and toss to combine.
- Place a scoop of the shrimp mixture in your Paleo wrap, top with micro greens, mint and cucumber and roll tightly.
- Serve immediately!
