I had the pleasure of attending Mickey’s cookbook release party in Seattle earlier this month and I got to spend more time with her in Austin at PaleoFX. Mickey is one of the loveliest people that I have ever met! She is so warm, friendly and fun. She also has such an inspiring story of healing her own health with real food. What is Autoimmune Paleo (AIP)?
The autoimmune Paleo protocol, commonly referred to as AIP, takes the Paleo diet a bit further. In addition to avoiding grains, legumes and dairy, it is recommended that those with autoimmune conditions (or suspected autoimmune conditions) should also remove eggs, nuts, seeds, nightshades (potatoes, tomatoes, peppers, eggplants), food chemicals (like thickeners and artificial sweeteners) and over the counter medications like NSAIDs (ibuprofen). Just as a side note, I want to mention that NSAIDS are really harsh on the gut even for those that don’t have autoimmune conditions. They contributed tremendously to my own health problems.
How does Autoimmune Paleo work?
The Autoimmune Paleo protocol works by healing the gut. In almost all cases of autoimmune conditions the digestive system is compromised. Often both intestinal permeability (aka leaky gut) and dybosis are present. Leaky gut occurs when the gut lining is so damaged that food, toxins and pathogens get through the gut lining and into the body. Dybosis is an imbalance of the gastrointestinal tract. Basically, it’s when the bad bacteria has taken over. When the foods that are restricted on the AIP protocol are removed from the diet, it gives the digestive tract a chance to heal and eventually allow the gut to restore the balance of bacteria.
With all these dietary restrictions, it’s crucial to have some good recipes. Let’s be honest, AIP isn’t exactly easy. It requires commitment and planning. Mickey’s book is a great tool in helping you meal plan and cook delicious and easy to make recipes. An added bonus is that all of these recipes are toddler and kid friendly, as they are void of all common allergens, including nuts.
You have to try Mickey’s Raspberry Coconut Cheesecake. We tried them at the party … so soo good! I tried a hundred times to get a good photo for you guys, but the lighting was poor and I only had my phone, plus I couldn’t get a second without someone coming by to grab a piece.

Autoimmune Paleo Three-Herb Beef Patties
Ingredients
2 lbs. grass-fed ground beef
1 tablespoon finely chopped fresh rosemary
1 tablespoon finely chopped fresh thyme
1 tablespoon finely chopped fresh sage
1 teaspoon sea salt
1 tablespoon solid cooking fat
- In a large bowl, combine the ground beef, fresh herbs, and salt.
- Using your hands, form into 12 patties.
- Heat the cooking fat in a cast-iron skillet on medium heat. Cook the patties for about 5 to 8 minutes per side, until nicely browned on the outside and cooked throughout. (Alternatively, bake the patties in the oven for about 20 minutes at 400 degrees F.)
