We had a very hodge-podge Easter meal this year. Traditionally, Armenians don’t serve meat on Easter, since it’s given up for lent. In my family, Easter dinner usually consists of fish, rice, a Persian fritatta with fresh herbs (recipe coming soon!), plus various other sides. Well, I spaced that it was Easter this year and I marinated a couple of pounds of carne asada. We decided to have this along side everything else. I come from a long line of piggies, so this was no problem! We devoured it all!

We used the carne asada to make a steak fajita salad with sauteed veggies. Today, I am going to share the recipe for the vinaigrette with you. It brought together the flavors of the meat and sauteed veggies perfectly! Check back tomorrow for the steak marinade recipe!
Ingredients
1/4 cup olive oil
Juice of 2 limes
1 teaspoon honey
2 tablespoon fresh cilantro, minced
1 clove garlic, crushed
zest of 1/2 a lime
1/8 teaspoon cumin
1/8 teaspoon chili powder
salt & pepper to taste
- In a small bowl, whisk together olive oil, lime juice, honey, garlic, lime zest, cumin and chili powder. Stir in minced fresh cilantro. Adjust salt & pepper to taste.

Lovely! I did a blog post on it a while back, it’s one of my favourites 🙂 Persian food is YUM so it should be shared and happy to see others doing so, although since going Paleo some things have been harder to recreate!

I have to try yours! It looks so good. My mom’s is more simple, just herbs and spinach. I think I am going to try making one soon with kale & chard!
