This Fiery Fruit Salsa used to be one of my favorite recipes to make in my pre-paleo days, but I haven’t made it in ages because it calls for 1 chipotle peppers in adobo sauce. Did you know that some chipotle peppers in adobo sauce aren’t gluten-free? Some brands have wheat flour in them. You wouldn’t think that wheat flour was hiding out with your chipotle peppers, but apparently it is! Even the ones that don’t have wheat have other questionable ingredients, like vegetable oils. And this salsa just wouldn’t be this salsa without that one ingredient. The chipotle pepper is what adds the smokey heat that compliments the sweetness of the pineapple so well! Now that I have figured out how to make chipotle peppers in adobo sauce from scratch, this salsa has made a comeback!
This is the perfect recipe to bring to a Memorial Day barbeque! We are headed to Big Sur for our annual Memorial Day camping trip. We’ll be serving this alongside some fresh fish that we are going to pick up straight from the harbor on Friday morning. I am so excited about this! If you have been following me on Instagram, you probably saw some photos of the salmon we picked up last week. Did you see how red that thing was? It was so fresh and tasty! We were eating it raw, as we were filleting.
This will be Indy’s first year in Big Sur and her first camping trip ever! I think she’ll love it. She’s such an outdoors girl. On warm days, she posts up under our magnolia tree all day and only comes into the house to take her naps!

2 cups chopped fresh pineapple
2 roma tomatoes, chopped
1 chipotle pepper in adobo sauce, finely chopped (I make my own)
1 tablespoon of adobo sauce
2 tablespoons olive oil
juice of 1 orange
juice of 1/2 lime
- Combine all ingredients in a medium size bowl, except avocado
- When all ingredients are combined, then fold in avocado without smashing.
- Serve!
