This was my favorite meal during our road trip. When we got to Orcas Island, we stopped in a local grocery store in Eastsound (the little downtown area) and it had a wild-caught seafood market. We picked up a couple of pounds of halibut (so delicious!) and some fresh ingredients to make mango-avocado salsa, and a side of roasted veggies.
We rubbed the halibut with a couple of tablespoons of olive oil, the juice of 1/2 a lemon, and a dry herb mix. We then wrapped it in foil and cooked it over the fire pit for about 20-25 mins.
This was a perfect, light and refreshing meal for a summer night. It would also be great for entertaining, since you can make the salsa in advance, and just grill the fish when you are ready!
Mango-Avocado Salsa
Ingredients:
1 avocado, diced
1 mango, peeled and diced
1/4 cup red onion, chopped
1 habanero pepper, seeded and chopped
2 tablespoons cilantro, chopped
2 tablespoons olive oil
1 clove of garlic, crushed
salt and pepper to taste
Mix all ingredients in a bowl, except for avocado. Gently toss together and then add avocado. This way the avocado will not get mashed. Adjust lime juice, olive oil, salt and pepper to taste. Refrigerate for 30 mins to 1 hour prior to serving.

I found some fresh wild flounder at the store and broiled it with salt, pepper, olive oil, and lime juice. Then I put this delicious salsa on it and…. AMAZING!!! keep up the good stuff comin!
