Indonesian Chicken Skewers with Peanut Sauce

If you’re looking to take your summer grilling to the next level, this is the recipe for you. These chicken skewers are packed with Indonesian flavor, making them delicious on their own (and who doesn’t love eating off a stick?). But when paired with this dairy-free peanut sauce, I’ll guarantee you’ll be making these more than once this summer. You’ll want to make a double or triple batch of the peanut sauce – it tastes good on everything!

These skewers make a fantastic appetizer, or serve them with rice (or cauliflower rice) and vegetable skewers for a complete dinner. Bring them along to any BBQ and you’ll be the crowd favorite!

Indonesian Chicken Skewers with Peanut Sauce


For the Chicken Marinade

2 tsp fresh ginger, grated
1 Tbsp. coconut sugar (find organic coconut sugar here)
2 Tbsp. coconut aminos (find organic coconut aminos here)
1 Tbsp. toasted sesame oil (find organic toasted sesame oil here)
¼ cup Sprouts brand organic coconut milk
1 tsp. red curry paste (find it here)
2 lbs. chicken thighs, boneless, skinless, cut into long strips

For the Peanut Dipping Sauce

2 cloves of garlic
1 red chili pepper, diced
1 tsp. fresh ginger, grated
¼ cup coconut aminos
1 tsp. fish sauce (find it here)
1 Tbsp. fresh lime juice
½ cup organic peanut butter (you can sub almond butter – I like this kind)
1 tsp. toasted sesame oil
¼ cup Sprouts brand organic coconut milk
2 Tbsp. filtered water

  1. In a large bowl, combine all marinade ingredients, besides the chicken.
  2. Set chicken in the marinade and make sure it is all nicely coated. Cover and place in fridge to marinade for 30 minutes to overnight.
  3. While your chicken is marinating, soak bamboo skewers in a bowl of water. This will keep them from catching on fire while grilling.
  4. Remove the chicken from the marinade and thread strips on bamboo skewers.
  5. Grill the chicken on a hot grill, until it is cooked through, about 10-12 minutes, flipping half way
  6. The dipping sauce can be made in advance, to let the flavors meld and develop. To make the dipping sauce, place in a food processor and blend until smooth. Adjust salt and pepper to taste.
  7. Serve skewers with dipping sauce.
