I personally didn’t add honey to this drink, I thought the cantaloupe sweetened it enough. But, then again, I am not a big fan of sweet cocktails.
This is a perfect cocktail to have on a summer evening. And great for impressing guests 🙂 … You can change up the fruit with whatever you have on hand. I have made it with it berries, pineapples, and mangoes before.
Ingredients
2 teaspoons raw-honey (optional)
6 chunks of cantaloupe
6 or 7 fresh mint leaves, plus a sprig for garnish
1 tablespoon fresh lime juice, plus a wedge for garnish
1/4 cup light rum
1/4 cup seltzer
- Drop melons, and mint leaves into a sturdy glass and crush to a pulp with the end of a wooden spoon or a muddler. Add the honey (if-using), lime juice, and rum.
- Pour the contents into a martini shaker and shake until thoroughly mixed, then pour back into glass. Add ice cubes and seltzer; stir.
- Garnish with sprig of mint and lime wedge.
