Until very recently, I would find my self control to be very fleeting when it came to desserts (specifically cookies).
I’d reach into the cookie jar to grab myself a Grapefruit Blueberry Linzer cookie, and somehow (completely against my will, I might add…) I’d come out clutching onto 3 or 4. I realized there were worse things that I could indulge in, but it was my goal to get to a point in my relationship with desserts that they no longer controlled me. Well, my friends, it’s happened.
Although it seems to have happened overnight, this has really been about 2 years in the making. I started my personal journey toward a healthier lifestyle about a year prior, and had already come a LONG way in developing a healthier relationship with food with only one exception: sugar. It didn’t matter what the food was, if it had sugar, I was craving it in between and immediately following every meal. I satisfied these cravings with smoothies in the morning, a small treat after lunch, and an apple with sunflower seed butter as a snack, but when dinner rolled around… all bets were off. If we had a dozen cookies in the house, they wouldn’t even last a couple of days. Can you relate?
To keep this concise, I’ll cut right to the chase. The turning point happened when I started drinking Butter Coffee for breakfast. Yep, I started drinking about a quarter cup of fat blended into my morning coffee or tea, and suddenly those sugar cravings just went away. I’d still get the occasional cravings for cookies, and when I made them I still experienced those “I need more, more, more!” feelings, but in general, a tasty cup of Butter Coffee in the morning helped tremendously. It was transformative enough that I even created a free 2 week detox to teach others how to use fat to lose fat and beat those sugar cravings.
So what’s a girl to do when she’s almost to the point of control over the cookie jar, but just not quite there yet?
Introducing: Blueberries and Creme.
This dessert is so simple, but let me tell you, it is SO. STINKIN’. GOOD. Plus, it satisfies even the most intense sugar cravings! Not only does this dessert completely curb any cookie craving I have, but it is also a very nutrient-dense way to end the day. The blueberries contain fiber, folate, Vitamin C, antioxidants, have been shown to lower LDL (the bad cholesterol), and are naturally low in sugar. The full fat coconut milk and cinnamon both lend a sweetness to the dessert without adding any additional sugar, and both can help to balance blood sugar. If I haven’t already convinced you of its merits, I’ll say it again – it’s so stinkin’ good!
Blueberries and Creme (Dairy-Free)
Makes 1 serving
1 cup frozen blueberries
2–3 Tbsp full fat coconut milk (find it here or make your own!)
sprinkle of Ceylon cinnamon (find organic Ceylon cinnamon here)
Additional (optional) Toppings
Cacao nibs (find organic cocao nibs here)
Bee pollen (find organic bee pollen here)
Coconut chips (find organic coconut chips here)
Fresh raspberries
Cacao powder (find organic raw cacao powder here)
Chopped nuts
- I like to let my blueberries thaw a bit before eating, so I typically portion out a bowl while I’m making dinner, and it’s perfect by the time I’m ready to dig in. My husband likes his still completely frozen, since it makes the coconut milk solidify into a “magic shell sauce.” Works either way!
- Portion out blueberries and drizzle with coconut milk. Sprinkle cinnamon on top, along with any additional toppings.
